Seafood on a Thai beach is at its best when it is kept simple. Fresh catch, a hot grill or wok, a few bright herbs, and the sea a few steps away. If you are new to ordering it, here is how to do it well at Crystal Bay.
Start with what is fresh
Whole grilled fish is the classic order, and for good reason. It comes off the coals with crisp skin and soft flesh, usually with a lime and chilli dip on the side. Prawns and squid are the other safe bets, either grilled or tossed quickly in the wok.
Know the heat
Thai seafood dishes range from gentle to genuinely spicy. Tom Yam, the hot and sour soup, carries real heat and deep flavour. A green or red curry is milder and richer thanks to the coconut milk. If you are unsure, tell your server how much chilli you want. The kitchen will happily adjust.
Share, do not solo
The local way to eat is family style. Order a few dishes for the middle of the table, add a plate of rice, and pass everything around. A whole fish, a plate of prawns, a curry and a papaya salad will feed two or three people comfortably and let everyone taste more.
Drink the part
Cold beer and fresh seafood is a hard pairing to beat in this heat. If you prefer something softer, a fresh coconut or a fruit shake works just as well. Then settle in. Good seafood by the water is not a meal to rush.
